Veggies in the Garden

It's all starting to ripen!
Our not-so-little garden is starting to ripen with the heat of the sun. We've harvested our first batch of snap peas and snow peas and enjoyed them lightly grilled with olive oil and sea salt.
And now the tomatos are starting to ripen! First to turn red are the cheery tomatos, and the yellow Roma tomatos are starting to show their color too. We have about 24 tomato plants this year. Yes, 24. You can bet we'll have plenty to share and make into salsa and pasta sauce.
We've harvested one big eggplant already and another one is on its way. There is nothing like freshly picked eggplant in a quick stir-fry over rice. I love summer cuisine!
Onions. Let me tell you about onions. My grandfather would be so proud to hear that our crop is doing very well. Having never successfully grown a large onion (possibly due to impatience, but I still blame the soil) we have a very abundent crop of yellow, white and red onions. The tops are just starting to fall over which means that they have about 2 more weeks of ripening time and then it's harvest and curing time. Our neighbors better love veggies as they will soon be receiving baskets and baskets full of garden fresh onions and tomatos.
Oh, and we have a couple huge pumpkins already too! They are still green, but should turn orange just in time for carving.
